Texture Issues

Texture problems are the most common frozen dessert failures. This guide helps identify root causes and implement fixes.

The most frequent complaint. Large ice crystals create unpleasant mouthfeel.

  • Visible ice crystals
  • Crunchy or crystalline bite
  • Melts quickly to watery liquid
  • Lacks creaminess
CauseDiagnosisSolution
Insufficient sugarBrix below 26° (sorbet)Increase sugar; target 28–30° Brix
Insufficient fatFat below 8% (ice cream)Increase cream; add egg yolks
Insufficient solidsMSNF below 8%Add skim milk powder
No stabilizerBase lacks bodyAdd stabilizer at 0.3–0.5%
Improper agingBase not agedAge minimum 4 hrs, preferably overnight
Slow freezingChurn took too longPre-freeze canister colder; work faster
Temperature fluctuationRepeated thaw cyclesMaintain consistent -18°C storage
Storage too longIce crystal growth over timeConsume within 2 weeks

For sorbet:

  • Add 30g corn syrup per 500g base
  • Increase Brix by 2–3°
  • Add 0.5% Perfect Sorbet stabilizer

For ice cream:

  • Add 1 extra egg yolk per quart
  • Add 25g skim milk powder
  • Ensure overnight aging

Excessive chewiness, almost like taffy.

  • Pulls and stretches
  • Rubbery resistance
  • Doesn’t melt properly
  • Coats mouth unpleasantly
CauseDiagnosisSolution
Too much stabilizerStabilizer over 0.6%Reduce stabilizer by 30–50%
Wrong stabilizer typeSingle-gum systemUse blended stabilizer
Overcooked custardEgg proteins over-setDon’t exceed 82.8°C / 181°F
Too much eggYolk over 15% of baseReduce yolks by 20%
Corn syrup excessMore than 10% of sugarsReduce corn syrup; substitute granulated
  • Dilute base with 50–100g milk per quart
  • Add 20g cream to increase fat ratio
  • Reduce stabilizer in next batch

Base never hardens properly; scoops collapse.

  • Soupy at -18°C / 0°F
  • Melts immediately when scooped
  • Puddle formation on plate
  • No structure
CauseDiagnosisSolution
PAC too highCalculated PAC over 300Reduce dextrose/invert sugar
Too much alcoholAlcohol over 3% of baseReduce or eliminate alcohol
Insufficient freezingFreezer not cold enoughVerify -18°C minimum
Over-churnedAir content too highStop churn earlier
Sugar imbalanceToo much fructose/glucoseSubstitute with sucrose
  • Harden at -22°C / -8°F or colder for 6+ hrs
  • Next batch: reduce dextrose by 25%
  • Add 25g skim milk powder for body

Rock-solid at serving temperature.

  • Scoop bends or breaks
  • Requires significant force
  • Chips rather than curls
  • Needs 20+ min tempering
CauseDiagnosisSolution
PAC too lowCalculated PAC below 220Increase dextrose or corn syrup
Insufficient fatFat below 8%Increase cream content
Insufficient sugarTotal sugars below 15%Increase sugar
Over-frozenStorage below -22°CStore at -18°C exactly
Insufficient agingStabilizers not hydratedAge overnight
  • Temper 15–20 min at room temperature
  • Store in door of freezer (warmer zone)
  • Next batch: add 20g dextrose per quart

Gritty feeling, like fine sand.

  • Gritty on tongue
  • Sugar crystals visible
  • Unpleasant crunch
  • Doesn’t smooth out
CauseDiagnosisSolution
Sugar not dissolvedRushed mixingHeat base to ensure full dissolution
Lactose crystallizationHigh milk solids + slow freezeAdd invert sugar; faster churn
Sucrose crystallizationSugar over 22%Replace portion with corn syrup
Invert sugar overdoseFructose crystallizedReduce invert sugar
  • Re-blend base and strain
  • Add 20g corn syrup to prevent future crystallization
  • Ensure all sugars dissolved before aging

Fat coats mouth unpleasantly.

  • Slick, oily sensation
  • Visible fat globules
  • Doesn’t feel refreshing
  • Heavy, cloying
CauseDiagnosisSolution
Fat too highFat over 16%Reduce cream; increase milk
Emulsion brokenFat separated during processingRe-emulsify with immersion blender
Butter chunksCream over-whipped during churnChurn colder; shorter time
Insufficient emulsifierNo egg yolks in eggless baseAdd lecithin at 0.5%
  • Warm base to 40°C, re-emulsify, re-chill
  • Add 2g soy lecithin per quart, blend thoroughly
  • Next batch: reduce cream by 15%

Too light and mousse-like.

  • Collapses when scooped
  • Lacks density
  • Melts very quickly
  • Feels insubstantial
CauseDiagnosisSolution
Over-churnedOverrun above 100%Stop churn earlier
Base too thinInsufficient viscosityAdd stabilizer or egg yolks
Aggressive dasherMachine whipping too fastReduce speed if adjustable
Air incorporation issuesStarting base too warmChill base to 4°C before churn
  • Pack firmly when transferring to container
  • Press plastic directly onto surface
  • Next batch: churn 20% less time
