No-Churn Base
No ice cream maker? No problem. This technique uses whipped cream to incorporate air and sweetened condensed milk to depress freezing point. The result is surprisingly creamy—a legitimate shortcut, not a compromise.
Characteristics
Section titled “Characteristics”| Property | Value |
|---|---|
| Fat % | ~25% |
| Total sugar | ~22% |
| PAC | ~300 |
| Target overrun | 80–120% (from whipping) |
| Character | Rich, sweet, soft-scoop |
Master Formula
Section titled “Master Formula”| Component | 1 Qt | 2 Qt |
|---|---|---|
| Base | ||
| Heavy cream (cold) | 475g (2 c) | 950g |
| Sweetened condensed milk | 300g (1 can) | 600g |
| Vanilla extract | 10g (2 tsp) | 20g |
| Fine sea salt | 1g | 2g |
| Base total | ~786g | ~1572g |
Why It Works
Section titled “Why It Works”The Science
Section titled “The Science”Whipped cream: Provides air (overrun) and fat structure that would normally come from churning. Pre-whipping means air is incorporated before freezing.
Sweetened condensed milk: Contains ~55% sugar and 8% fat in a thick, partially evaporated form. This high sugar concentration dramatically depresses freezing point, keeping the ice cream soft.
No churning needed: Because air is pre-incorporated and freezing point is heavily depressed, the mixture freezes to scoopable consistency without mechanical agitation.
Method
Section titled “Method”Chill Equipment
Place mixing bowl and whisk attachment in freezer for 15 minutes. Cold equipment produces better whipped cream.
Whip Cream
Pour cold heavy cream into chilled bowl. Whip on medium-high until stiff peaks form. Cream should hold its shape firmly but not be grainy (over-whipped).
Combine Condensed Milk and Flavorings
In a separate bowl, whisk together condensed milk, vanilla extract, and salt. Add any liquid flavorings here.
Fold Together
Add condensed milk mixture to whipped cream. Using a large spatula, fold gently until just combined. Preserve as much air as possible—don’t stir or deflate.
Add Mix-Ins (Optional)
Fold in any solid mix-ins (chocolate chips, cookie pieces, etc.) at this stage.
Transfer to Container
Pour into storage container. Smooth top with spatula.
Freeze
Cover with plastic wrap (pressed directly onto surface) and lid. Freeze minimum 6 hours, preferably overnight.
Serve
Scoop directly—no tempering usually needed due to soft texture.
Critical Technique: Folding
Section titled “Critical Technique: Folding”Proper folding preserves air volume:
- Add condensed milk mixture on top of whipped cream
- Cut down through center with spatula edge
- Sweep along bottom of bowl
- Lift and fold over top
- Rotate bowl 90°
- Repeat until just combined (10–15 strokes)
Flavor Variations
Section titled “Flavor Variations”Chocolate
Section titled “Chocolate”| Addition | Amount per 1 Qt |
|---|---|
| Cocoa powder | 40g |
| Chocolate chips | 80g (mix-in) |
Sift cocoa into condensed milk mixture; whisk to combine before folding.
Coffee
Section titled “Coffee”| Addition | Amount per 1 Qt |
|---|---|
| Instant espresso powder | 15g |
| Coffee liqueur (optional) | 30g |
Dissolve espresso in condensed milk before folding.
Strawberry
Section titled “Strawberry”| Addition | Amount per 1 Qt |
|---|---|
| Strawberry purée (reduced) | 150g |
| Reduce cream to | 400g |
Reduce purée by half on stovetop to concentrate flavor and remove water. Cool completely before folding into condensed milk.
Dulce de Leche
Section titled “Dulce de Leche”| Adjustment | |
|---|---|
| Replace sweetened condensed milk with | 300g dulce de leche |
| Add | 2g sea salt (for salted version) |
Cookies and Cream
Section titled “Cookies and Cream”| Addition | Amount per 1 Qt |
|---|---|
| Crushed Oreo cookies | 120g |
Reserve some for topping. Fold remainder into base.
Peanut Butter
Section titled “Peanut Butter”| Addition | Amount per 1 Qt |
|---|---|
| Creamy peanut butter | 100g |
| Chocolate chips | 60g |
Microwave peanut butter 20 seconds to soften. Swirl into base without fully mixing for ribboned effect.
Troubleshooting
Section titled “Troubleshooting”| Problem | Cause | Solution |
|---|---|---|
| Icy texture | Cream under-whipped | Whip to stiff peaks |
| Dense/heavy | Cream over-whipped or over-folded | Stop whipping at stiff peaks; fold gently |
| Too sweet | Inherent to method | Reduce condensed milk to 250g (texture may be icier) |
| Won’t scoop | Freezer too cold | Temper 5 min at room temperature; or use a warmer freezer zone |
| Melts too fast | Overrun too high | Slightly under-whip cream |
| Grainy | Cream whipped to butter | Watch carefully; stop at stiff peaks |
Comparison to Churned Ice Cream
Section titled “Comparison to Churned Ice Cream”| Property | No-Churn | Churned |
|---|---|---|
| Equipment | None (bowl + whisk) | Ice cream maker |
| Time to finish | 6+ hours freeze | 30 min churn + 4 hrs freeze |
| Sweetness | Higher | Adjustable |
| Texture | Soft, mousse-like | Variable by style |
| Overrun | 80–120% | 20–80% |
| Control | Limited | Full |
When to Use No-Churn
Section titled “When to Use No-Churn”Good for:
- No equipment available
- Quick crowd-pleasing dessert
- Teaching children
- Flavors that complement sweetness
Not ideal for:
- Gelato-style texture
- Controlled sweetness
- Professional applications
- Delicate flavors (sweetness overwhelms)
Make-Ahead Notes
Section titled “Make-Ahead Notes”- Base cannot be held before freezing (whipped cream deflates)
- Frozen product holds well 2–3 weeks
- Quality degradation similar to churned ice cream
- Can be scooped directly from freezer (no tempering)
