Chocolate Gelato

Chocolate gelato requires the split-cream method: custard base meets scalded cream poured over chocolate. This creates proper emulsion and intense chocolate flavor.

Intense, bittersweet chocolate with clean finish.

Calculated Values (1x):

  • Fat: 15.2%
  • Total chocolate: 18%
  • Serving temp: -12°C / 10°F
  1. Custard base: Combine milk, first cream portion, sugar, and salt in jar. Add whisked yolks. Sous vide 82.8°C / 181°F for 50 min.

  2. Prep chocolate: Finely chop chocolate into bowl while custard cooks.

  3. Scald cream: Heat second cream portion to just below simmer (85°C / 185°F).

  4. Build ganache: Pour scalded cream over chocolate. Let sit 30 sec. Whisk from center outward in small circles until smooth.

  5. Combine: Strain hot custard directly into chocolate mixture. Whisk thoroughly.

  6. Emulsify: Blend with immersion blender 30 sec for perfect emulsion.

  7. Add vanilla: Stir in vanilla once mixture drops below 40°C / 104°F.

  8. Age: Refrigerate 4+ hrs. Chocolate flavor develops overnight.

  9. Churn: Process to -6°C / 21°F.

Sweeter, creamier, with caramel-malt notes.

Follow Dark Chocolate method. Milk chocolate melts at lower temperature—ensure cream is 80°C / 176°F, not boiling.

Milk chocolate contains more sugar than dark. Custard sugar is reduced to 75g to compensate. Adjust by 10g increments based on chocolate sweetness.

Buttery, vanilla-forward with creamy richness.

Yield: ~785g base → ~950ml churned (1x)

  1. Custard: Standard sous vide method.

  2. Prep chocolate: Finely chop white chocolate.

  3. Scald cream: Heat to 75°C / 167°F only—white chocolate scorches easily.

  4. Build: Pour cream over chocolate. Rest 1 min. Whisk gently until smooth.

  5. Combine: Strain custard into chocolate. Whisk to combine.

  6. Emulsify and finish: Blend, add vanilla paste, age, churn.

Yield: ~680g strained base → ~820ml churned (1x)

  1. Toast nibs (optional): Spread on sheet pan. Toast at 150°C / 300°F for 8 min. Intensifies flavor.

  2. Combine: Add all custard ingredients including nibs to jar.

  3. Sous vide: 82.8°C / 181°F for 50 min. Nibs extract flavor during cooking.

  4. Steep: After cooking, let sit 30 min for deeper extraction.

  5. Strain: Press firmly through fine mesh to extract nib oils.

  6. Finish: Add vanilla. Age, churn.

  3. Chocolate build: Standard split-cream method.

  4. Double emulsify: Extra blend time (45 sec) ensures cocoa integrates smoothly.

Sous vide custard → split-cream ganache → banana caramel swirl, finished in a mason jar.

“My sister once made a dark chocolate cake with chocolate ganache layered with fresh banana.” Ganache as matrix, caramelized banana as the bright interruption, chocolate cookie as the cake crumb.

Banana Caramel Swirl (Make First — Needs to Cool)

Section titled “Banana Caramel Swirl (Make First — Needs to Cool)”
  1. Melt butter over medium heat. Add brown sugar; stir until dissolved (~1 min).
  2. Add banana in single layer. Cook 2–3 min per side until caramelized and softened.
  3. Add lemon juice and salt. Mash to desired texture — purée for a smooth ribbon, leave chunks for rustic.
  4. Deglaze (optional) — off heat, add rum. It will steam. Stir.
  5. Reduce if needed to thick/jammy (spoonable, not pourable), then cool and refrigerate.
  1. Dry-whisk sugar, dextrose, skim milk powder, cocoa, and salt until uniform. (Cocoa goes here — dispersing it dry prevents clumping in the jar.)
  2. Whisk in yolks until smooth, then milk and the custard-portion cream (40g). Add vanilla pods + seeds.
  3. Blend cold — immersion blend 10–15 sec so cocoa is fully suspended. Divide between jars. Finger-tighten lids.
  4. Sous vide — 181°F / 82.8°C for 50 minutes.
  5. Make the ganache — during the final 10 min of cooking, place chopped chocolate in a large, completely dry bowl. Scald the scald-portion cream (80g) to just below boiling (180–185°F / 82–85°C). Pour over the chocolate, rest 1 min, then whisk from the center outward until smooth and glossy.
  6. Combine into the ganache — remove jars; strain the hot custard through fine mesh into the ganache in a steady stream, whisking constantly, until uniform and glossy. Discard vanilla pods.
  7. Check — if any graininess remains, immersion blend 20–30 sec.
  8. Cool — ice bath to below 40°C. Cover surface.
  9. Age — refrigerate 8 hr minimum, overnight preferred.
  1. Churn — to -6°C / 21°F.
  2. Layer swirl — ⅓ gelato → ~50g banana caramel → single knife drag. Repeat ×3. Visible ribbons are the goal; do not over-mix.
  3. Fold crumble (if using) — scatter into final layer before last drag.
  4. Harden — -18°C / 0°F, 4 hr minimum.

Why Cocoa + Chocolate, Not Chocolate Alone

Section titled “Why Cocoa + Chocolate, Not Chocolate Alone”

Pure 70% chocolate is ~42% cocoa butter. Hitting intense chocolate flavor with chocolate only drives total fat to ~24% — greasy, flavor-muting, and prone to churning to butter. Cocoa powder delivers flavor and water-binding cocoa solids at ~11% fat, so splitting the load lands fat at ~12.6% while raising chocolate intensity.

Pouring hot custard directly onto chopped chocolate seizes it — the aqueous custard clumps the sugar and cocoa-solid particles before there’s enough liquid volume and shear to emulsify, leaving grit. Split-cream sidesteps this: the scalded cream forms a stable ganache first, and a finished ganache readily accepts the hot custard without breaking. Keep the chocolate bowl bone-dry; scald the cream to a true 180–185°F.

Lemon juice is non-negotiable — banana browns fast. Caramelization does double duty: it drives off water (swirl stays jammy, not icy) and generates the Maillard compounds that actually bond the banana to the chocolate (see Molecular Structure above). The swirl’s high sugar + ethanol hold its freezing point below the base, so the ribbon stays soft at serving temp. Over-loading the swirl softens and bleeds the whole batch — stay near 150g/qt.

Formula assumes 70% dark (≈29% sugar in-chocolate). For milk chocolate, cut added sucrose ~25g and expect a sweeter, milder result.
