Caramel Swirls

Proper swirl caramel stays soft at freezer temperatures through careful sugar balance and fat content. These recipes remain pliable for clean ribbon effects.

A buttery, salty-sweet ribbon that holds its shape when layered.

Component1x2x
Granulated sugar200g400g
Water60g (¼ c)120g (½ c)
Heavy cream, warm180g (¾ c)360g (1½ c)
Unsalted butter, cubed55g110g
Light corn syrup30g60g
Fleur de sel4g8g
Vanilla extract5g10g

Yield: ~450g (1x) | ~900g (2x)

Target: Soft at -18°C / 0°F

  1. Prepare mise: Warm cream in microwave 30 sec. Cube butter to 1cm pieces. Measure corn syrup.

  2. Wet caramel: Combine sugar, water, and corn syrup in heavy 3qt saucepan. Swirl to dissolve—do not stir once heat applied. Cook over medium-high.

  3. Color development: Watch for amber color around edges. Once color appears, swirl pan gently to distribute. Continue to deep amber, 175–180°C / 347–356°F on candy thermometer.

  4. Cream addition: Remove from heat. Carefully stream in warm cream—mixture will bubble violently. Whisk continuously.

  5. Emulsify: Add butter one cube at a time, whisking until incorporated. Add salt and vanilla.

  6. Cool: Transfer to glass container. Cool to room temperature, then refrigerate. Caramel thickens as it cools.

  7. Use: Drizzle 25–30g ribbons per layer while packing ice cream. Drag knife through once for swirl pattern.

A warming, complex ribbon for pairing with vanilla, pecan, or chocolate bases.

Component1x2x
Granulated sugar200g400g
Water50g (3½ T)100g (7 T)
Heavy cream, warm150g (⅔ c)300g (1⅓ c)
Unsalted butter, cubed55g110g
Light corn syrup25g50g
Bourbon30g (2 T)60g (¼ c)
Fine sea salt3g6g

Yield: ~440g (1x) | ~880g (2x)

  1. Wet caramel: Combine sugar, water, and corn syrup. Cook undisturbed to deep amber, 177°C / 350°F.

  2. Deglaze: Remove from heat. Carefully add cream—it will bubble dramatically.

  3. Emulsify: Whisk in butter until smooth. Add bourbon and salt.

  4. Reduce: Return to low heat. Simmer 2 min to cook off raw alcohol while retaining bourbon flavor.

  5. Cool: Transfer to container. Rest 20 min before refrigerating.

Umami-forward with subtle fermented complexity. Pairs exceptionally with black sesame, roasted banana, or matcha.

Component1x2x
Granulated sugar175g350g
Water50g (3½ T)100g (7 T)
Heavy cream, warm150g (⅔ c)300g (1⅓ c)
White miso paste45g90g
Unsalted butter, cubed45g90g
Light corn syrup25g50g

Yield: ~420g (1x) | ~840g (2x)

  1. Miso slurry: Whisk miso into warm cream until smooth. Set aside.

  2. Wet caramel: Combine sugar, water, and corn syrup. Cook to medium amber, 170°C / 338°F—slightly lighter than standard to balance miso’s savory notes.

  3. Combine: Remove from heat. Stream in miso-cream mixture. Whisk vigorously.

  4. Finish: Add butter, whisking until emulsified. No additional salt needed—miso provides plenty.

  5. Rest: Cool completely before use. Flavor deepens overnight.

Slow-cooked milk caramel with characteristic rounded sweetness.

Component1x2x
Sweetened condensed milk396g (1 can)792g (2 cans)
Fine sea salt2g4g
Vanilla extract3g6g

Yield: ~375g (1x) | ~750g (2x)

  1. Prepare: Transfer condensed milk to mason jar. Add salt. Seal finger-tight.

  2. Cook: Sous vide at 85°C / 185°F for 12–14 hours. Color deepens with time—12 hrs yields caramel color, 14 hrs approaches dark amber.

  3. Finish: Cool jar 30 min. Open carefully—pressure may have built. Whisk smooth, add vanilla.

  4. Store: Refrigerate up to 3 weeks.

  1. Prepare: Pour condensed milk into heavy saucepan. Add salt.

  2. Cook: Stir continuously over medium-low heat, scraping bottom constantly. Cook 45–60 min until deep caramel color and thick.

  3. Finish: Remove from heat. Stir in vanilla. Transfer to container.

Caramel should be at room temperature (18–22°C / 65–72°F) for best flow. Cold caramel tears rather than ribbons. Warm caramel sinks and pools.

  1. Add ⅓ ice cream to container
  2. Drizzle ⅓ caramel in thin streams
  3. Drag knife through once—don’t over-mix
  4. Repeat two more times
  5. Press plastic directly onto surface
