Fruit Ribbons

Standard fruit purées freeze into icy shards. These ribbons use sugar and sometimes a touch of stabilizer to maintain soft, jammy texture throughout frozen storage.

A flexible template adaptable to most fruits. Sugar concentration keeps the ribbon soft at -18°C / 0°F.

Component% of Purée Weight
Fruit purée (strained)100% (base)
Granulated sugar25–35%
Corn syrup or glucose10–15%
Lemon juice2–3%
Fine sea salt0.2%

Yield: ~140–150% of starting purée weight

Sugar adjustment:

  • High-acid fruits (raspberry, passion fruit): 35% sugar
  • Moderate fruits (strawberry, peach): 30% sugar
  • Sweet fruits (mango, banana): 25% sugar

Bright, intensely fruity with clean acidity.

Light corn syrup35g70g
Lemon juice8g16g
Fine sea salt0.6g1.2g

Yield: ~350g (1x) | ~700g (2x)

  1. Purée: Process raspberries in blender until smooth, 30 sec.

  2. Strain: Pass through fine-mesh strainer, pressing firmly. Discard seeds. You’ll have ~240g strained purée from 300g berries.

  3. Cook: Combine strained purée, sugar, and corn syrup in saucepan. Heat over medium, stirring frequently.

  4. Reduce: Simmer 8–10 min until mixture coats spoon and reaches ~65°Brix (thick but still pourable). Watch carefully—fruit burns quickly.

  5. Finish: Remove from heat. Stir in lemon juice and salt.

  6. Cool: Transfer to jar. Refrigerate at least 4 hrs before use.

Concentrated strawberry flavor with bright red color.

Fresh strawberries, hulled400g800g

Light corn syrup30g60g
Lemon juice10g20g
Fine sea salt0.6g1.2g

Yield: ~340g (1x) | ~680g (2x)

  1. Purée: Blend strawberries until smooth.

  2. Optional strain: Pass through strainer for smoother ribbon. Seeds are small—straining is optional but recommended for clean swirls.

  3. Cook: Combine purée, sugar, and corn syrup. Simmer over medium heat.

  4. Reduce: Cook 12–15 min, stirring frequently. Reduce by ~40%. Mixture should heavily coat spoon.

  5. Finish: Add lemon and salt. Taste—adjust acid if needed.

  6. Cool: Refrigerate minimum 4 hrs.

Intensely tropical with sharp, complex acidity. Use sparingly—flavor is concentrated.

Component1x2x
Passion fruit purée (storebought or fresh-strained)200g400g
Granulated sugar80g160g
Glucose syrup30g60g
Fine sea salt0.5g1g

Yield: ~280g (1x) | ~560g (2x)

  1. If using fresh: Halve 8–10 passion fruits. Scoop pulp into strainer over bowl. Press firmly to extract juice, leaving seeds behind.

  2. Combine: Mix purée, sugar, and glucose in saucepan.

  3. Cook: Heat over medium-low, stirring constantly. Passion fruit is high-acid and scorches easily.

  4. Reduce: Simmer 6–8 min until slightly thickened. Don’t over-reduce—passion fruit intensifies dramatically.

  5. Season: Stir in salt.

  6. Cool: Refrigerate. Flavor mellows and rounds overnight.

Yield: ~380g (1x) | ~760g (2x)

  1. Purée: Blend blueberries until smooth.

  2. Strain: Pass through fine strainer. Press firmly—blueberry skins are tough. You’ll lose ~25% to solids.

  3. Cook: Combine strained purée, sugar, and corn syrup. Simmer over medium.

  4. Reduce: Cook 10–12 min, stirring frequently. Reduce by ~35%.

  5. Finish: Remove from heat. Stir in lemon juice, zest, and salt.

  6. Steep: Let sit 10 min to bloom lemon oils, then strain out zest if desired (or leave for texture).

  7. Cool: Refrigerate at least 4 hrs.

Silky tropical ribbon with natural sweetness.

Yield: ~400g (1x) | ~800g (2x)

  1. Purée: Blend mango until completely smooth. Strain if fibrous varieties.

  2. Cook: Combine purée, sugar, and corn syrup. Heat over medium.

  3. Reduce: Simmer 8–10 min. Mango is naturally thick—watch for scorching.

  4. Finish: Add lime and salt.

  5. Cool: Refrigerate. Consistency thickens considerably when cold.

Deep, complex sourness balanced with sugar. Exceptional with chocolate or almond bases.

  1. Thaw and purée: Blend cherries with their juices until smooth.

  2. Strain: Pass through strainer, pressing well. Remove skins and pits.

  3. Cook: Combine with sugar and corn syrup. Simmer over medium.

  4. Reduce: Cook 12–15 min until thick and jammy. Tart cherries are juicy—expect longer reduction.

  5. Finish: Add almond extract (if using) and salt.

  6. Cool: Refrigerate at least 6 hrs—cherry ribbon thickens significantly.

  1. Temperature: Ribbon should be refrigerator-cold (4°C / 40°F)—not room temperature
  2. Consistency: Should slowly drip from spoon, not pour freely
  3. Layering: Drizzle in thin streams, not globs
  4. Pattern: One knife drag per layer creates definition; more mixing = muddier appearance
