Foams & Airs
Foams and airs create ethereal textures that contrast with dense frozen desserts. They range from stable, structured foams to ephemeral airs that dissolve on contact.
Lecithin Airs
Section titled “Lecithin Airs”Ultra-light foams made by aerating lecithin-enriched liquids. Dissolve instantly on the tongue.

Method
Section titled “Method”-
Combine: Mix juice and simple syrup in wide, shallow container.

Troubleshooting
Section titled “Troubleshooting”| Issue | Cause | Fix |
|---|---|---|
| No foam forms | Lecithin not hydrated | Let hydrate 5 min before blending |
| Foam collapses instantly | Insufficient stabilizer | Increase lecithin or add gelatin |
| Foam too dense | Over-stabilized | Reduce gelatin; work more air in |
| Siphon clogs | Base too thick | Strain more thoroughly; thin slightly |
| Grainy texture | Undissolved lecithin | Blend longer; ensure proper hydration |
| Weak flavor | Diluted during foaming | Use concentrated base; adjust seasoning |
| Foam weeps | Insufficient stabilization | Add more gelatin; use immediately |
