Candy Components

Candy mix-ins require specific formulation and storage to maintain texture when frozen. Hygroscopic sugars absorb moisture quickly—timing and storage are critical.

Buttery, crisp toffee that stays snappy at freezer temperatures.

Granulated sugar200g400g
Water30g (2 T)60g (¼ c)
Light corn syrup15g30g
Fine sea salt2g4g
Vanilla extract5g10g

Yield: ~450g (1x) | ~900g (2x)

  1. Prep: Line sheet pan with silicone mat. Have vanilla measured and ready.

  2. Melt butter: Cut butter into 2cm cubes. Melt in heavy 3qt saucepan over medium heat.

  3. Add sugar: Stir in sugar, water, corn syrup, and salt.

  4. Cook: Continue stirring frequently. Mixture will bubble and darken. Cook to 150°C / 302°F (hard crack stage).

  5. Finish: Remove from heat immediately. Quickly stir in vanilla—it will sputter.

  6. Pour: Pour onto prepared pan. Tilt to spread to ~5mm thickness.

  7. Score: At 3–4 min (still pliable), score into pieces with oiled knife if desired.

  8. Cool: Let set completely, 30 min.

  9. Break: Snap into irregular pieces or along score lines.

  10. Store: Airtight container with silica packet. Room temperature up to 2 weeks.

Honey30g60g
Water30g (2 T)60g (¼ c)
Baking soda8g16g

Yield: ~300g (1x) | ~600g (2x)

  1. Prep: Line deep-sided sheet pan with parchment. Measure baking soda into small bowl near stove.

  2. Cook sugar: Combine sugar, golden syrup, honey, and water in large heavy saucepan (mixture expands dramatically). Cook over medium-high without stirring.

  3. Temperature: Heat to 150°C / 302°F. Mixture should be deep amber.

  4. Add soda: Remove from heat. Immediately dump in baking soda. Whisk quickly 3–4 seconds—mixture foams rapidly.

  5. Pour: Immediately pour into prepared pan. Do not spread or touch—let it expand naturally.

  6. Cool: Let set completely, 45 min minimum.

  7. Break: Snap or cut into rough 2cm pieces.

  8. Store: Airtight immediately. Honeycomb dissolves within hours if exposed to humidity.

Crushed candy for seasonal applications.

Candy canes or starlight mints150g300g

Yield: ~150g (1x) | ~300g (2x)

  1. Unwrap: Remove all wrappers. Check for any plastic bits.

  2. Crush: Place in heavy zip-top bag. Crush with rolling pin to desired size:

    • 3–5mm: Fine dust with small pieces (dissolves faster)
    • 5–8mm: Distinct chunks (maintains crunch longer)
  3. Sift (optional): Separate dust from chunks using coarse strainer. Use dust for flavor, chunks for texture.

  4. Store: Airtight container immediately. Use within 1 week of crushing—peppermint oils dissipate.

  • Add in final 30 sec of churn—extended churning dissolves candy
  • For longer storage in ice cream, fold at packing and consume within 1 week
  • Candy will begin softening after 3–4 days in ice cream regardless of technique
