Sugar Reference

Sugar management is the foundation of frozen dessert formulation. This reference provides everything needed for proper sugar selection and balancing.

POD (Potere Dolcificante / Sweetening Power)

Section titled “POD (Potere Dolcificante / Sweetening Power)”

Relative sweetness compared to sucrose (100).

PAC (Potere Anticongelante / Anti-Freezing Power)

Section titled “PAC (Potere Anticongelante / Anti-Freezing Power)”

Relative freezing point depression compared to sucrose (100).

Step 2: Apply formula

PAC = 19,100 / 728 × 10 = 262

Result: PAC of 262 is within target range (240–280).

  • Most sugar-free sweeteners don’t depress freezing point
  • Product will be much harder
  • Need to add fiber or stabilizers for body
  • Taste profile differs significantly
