Stabilizer Blending
Commercial stabilizer blends are convenient but opaque—you don’t know exactly what’s in them or in what proportions. Building your own blends gives you control, understanding, and the ability to optimize for specific applications.
Why Blend Multiple Stabilizers?
Section titled “Why Blend Multiple Stabilizers?”Single stabilizers have limitations. Blending creates synergies:
| Single Stabilizer | Limitation | Solved By Adding |
|---|---|---|
| LBG alone | No melt resistance | Lambda carrageenan |
| Guar alone | Can be gummy | LBG (smoother character) |
| Xanthan alone | Slimy texture | LBG (creamier) |
| Lambda carrageenan alone | Weak thickening | LBG or guar |
Synergy Principles
Section titled “Synergy Principles”LBG + Lambda Carrageenan
Section titled “LBG + Lambda Carrageenan”The foundational synergy for frozen desserts:
- Lambda carrageenan increases LBG’s effectiveness
- Combined creaminess greater than either alone
- Improved melt resistance
- Better ice recrystallization inhibition
Typical ratio: 5:1 (LBG:lambda carrageenan)
LBG + Xanthan
Section titled “LBG + Xanthan”Creates enhanced viscosity:
- Xanthan provides immediate thickening
- LBG provides long-term stability
- Combined viscosity exceeds sum of parts
Typical ratio: 3:1 to 5:1 (LBG:xanthan)
Galactomannans Together (LBG + Guar + Tara)
Section titled “Galactomannans Together (LBG + Guar + Tara)”Similar gums complement each other:
- LBG: Best creaminess
- Guar: Economic, cold-dispersible
- Tara: Middle ground, good synergy with carrageenan
Typical approach: LBG as primary, guar and/or tara as secondary
Building a Blend: Step by Step
Section titled “Building a Blend: Step by Step”Define Application
What are you stabilizing?
- Custard base (eggs present)
- Eggless base (no natural emulsification)
- Sorbet (no fat)
- Special application (low-fat, vegan, etc.)
Select Primary Stabilizer
Usually LBG or tara gum. This forms 40–60% of blend.
Add Secondary Stabilizers
Choose 1–2 secondary stabilizers that complement primary. Usually 20–40% of blend.
Include Synergist
Add lambda carrageenan for synergy. Usually 3–10% of blend.
Add Carrier
Include dextrose or maltodextrin to aid dispersion. Usually 10–20% of blend.
Test and Adjust
Make test batch. Evaluate texture. Adjust ratios as needed.
Blend Formulas by Application
Section titled “Blend Formulas by Application”Standard Gelato (Custard Base)

| Dextrose | 10% | Carrier, dispersion aid |
Total dose: 0.25–0.35% of base weight
Eggless Base
Section titled “Eggless Base”Without egg proteins, stronger stabilization needed:
| Component | Percentage | Function |
|---|---|---|
| LBG | 40% | Primary |
| Guar | 25% | Thickening |
| Lambda carrageenan | 10% | Creaminess |
| Xanthan | 5% | Emulsion stability |

Total dose: 0.35–0.45% of base weight
Sorbet
Section titled “Sorbet”No fat means stabilizers do all structural work:
| Component | Percentage | Function |
|---|---|---|
| LBG | 40% | Primary |
| Tara | 25% | Synergy with carrageenan |
| Guar | 20% | Economy, thickening |
| Lambda carrageenan | 5% | Melt resistance |
| Dextrose | 10% | Carrier |
Total dose: 0.40–0.50% of base weight
Low-Fat Base
Section titled “Low-Fat Base”Reduced fat requires enhanced stabilization:
| Component | Percentage | Function |
|---|---|---|
| LBG | 40% | Primary |
| Guar | 20% | Thickening |
| Lambda carrageenan | 15% | Enhanced creaminess |
| Xanthan | 5% | Body |
| Dextrose | 20% | Carrier |
Total dose: 0.40–0.50% of base weight
Vegan Base
Section titled “Vegan Base”All plant-derived components:
| Component | Percentage | Function |
|---|---|---|
| LBG | 45% | Primary |
| Tara | 25% | Secondary |
| Guar | 15% | Thickening |
| Lambda carrageenan | 5% | Synergy |
| Dextrose | 10% | Carrier |
Total dose: 0.40–0.50% of base weight
All components are naturally vegan.
Calculating Blend Amounts
Section titled “Calculating Blend Amounts”For Pre-Made Blend
Section titled “For Pre-Made Blend”If you’ve created 100g of blend:
Blend amount needed = base weight × target percentageExample: 0.35% stabilization of 1000g base
Blend needed = 1000g × 0.0035 = 3.5gFor Individual Components
Section titled “For Individual Components”Calculate each component separately:
Example: 0.30% total stabilization, blend is 50% LBG, 30% guar, 10% lambda, 10% carrier
For 1000g base:
- LBG: 1000 × 0.003 × 0.50 = 1.5g
- Guar: 1000 × 0.003 × 0.30 = 0.9g
- Lambda: 1000 × 0.003 × 0.10 = 0.3g
- Dextrose: 1000 × 0.003 × 0.10 = 0.3g
Making Blend in Advance
Section titled “Making Blend in Advance”For convenience, pre-mix larger quantities:
Calculate Quantities
For 100g blend at your desired ratios.
Weigh Carefully
Use precision scale (0.01g for small components).
Blend Thoroughly
Whisk together in dry bowl for 2–3 minutes. Pass through fine sieve.
Store
Keep in airtight container away from moisture. Label with date and ratios.
Use
Weigh needed amount per batch. Disperse as usual.
Shelf life: 6–12 months in dry, sealed container.
Adjusting for Specific Issues
Section titled “Adjusting for Specific Issues”If Product Is Too Icy
Section titled “If Product Is Too Icy”- Increase total stabilizer dose by 20%
- Increase LBG proportion
- Ensure proper hydration temperature
If Product Is Gummy
Section titled “If Product Is Gummy”- Reduce total dose by 20%
- Reduce guar proportion specifically
- Consider replacing guar with more LBG
If Meltdown Is Too Fast
Section titled “If Meltdown Is Too Fast”- Increase lambda carrageenan to 15% of blend
- Slightly increase total dose
If Texture Is Slimy
Section titled “If Texture Is Slimy”- Reduce xanthan if present
- Increase LBG proportion
- Reduce total dose
