Alternative Sweetener Guide
Section titled “Alternative Sweetener Guide”Sweetener Comparison
Section titled “Sweetener Comparison”| Sweetener | Sweetness vs Sugar | Freezing Point Effect | Notes |
|---|---|---|---|
| Allulose | 70% | Strong (≥ sugar) | Best overall sugar replacement |
| Erythritol | 70% | Minimal | Can crystallize; use with allulose |
| Monk fruit | 150–200× | None | Use tiny amounts; needs bulking agent |
| Stevia | 200–300× | None | Can have bitter aftertaste |
| Xylitol | 100% | Good | Toxic to dogs; cooling effect |
Recommended Blends
Section titled “Recommended Blends”| Goal | Blend |
|---|---|
| Best texture | 70% allulose + 30% erythritol |
| Maximum sweetness | Allulose + monk fruit extract |
| Budget option | Erythritol + stevia |
Texture Considerations
Section titled “Texture Considerations”| Issue | Cause | Solution |
|---|---|---|
| Too hard | Insufficient freezing point depression | Increase allulose |
| Crystallization | Too much erythritol | Reduce erythritol; increase allulose |
| Icy texture | Insufficient stabilization | Increase guar gum |
| Cooling sensation | Erythritol | Reduce erythritol |
Tips for Low-Sugar Success
Section titled “Tips for Low-Sugar Success”Essential Adjustments
Section titled “Essential Adjustments”- Add stabilizer: Guar gum (0.15–0.2% by weight) compensates for reduced sugar
- Use allulose: Depresses freezing point as much as or more than sucrose per gram (it is a monosaccharide), which keeps low-sugar bases soft
- Increase fat: Higher fat compensates for lost body
- Expect softer texture: Low-sugar ice cream won’t be as firm
- Serve slightly warmer: Store at -18°C; serve at -12°C (slightly warmer than the -14°C used for full-sugar ice cream)
