Enzymes
Enzymes are biological catalysts that modify food at the molecular level. In frozen desserts, they clarify juices, reduce sweetness, improve texture, and create unique effects.
Enzyme Fundamentals
Section titled “Enzyme Fundamentals”Key Properties
Section titled “Key Properties”| Factor | Effect |
|---|---|
| Temperature | Each enzyme has optimal range; too hot denatures |
| pH | Affects activity; extremes can deactivate |
| Time | Longer exposure = more complete reaction |
| Concentration | Higher dose = faster reaction |
Deactivation
Section titled “Deactivation”Most enzymes are deactivated by heating above 70–80°C / 158–176°F for several minutes.
Pectinase (Pectinex)
Section titled “Pectinase (Pectinex)”Breaks down pectin in fruit, releasing juice and clarifying.
Applications
Section titled “Applications”| Use | Effect |
|---|---|
| Juice extraction | Higher yield from fruit |
| Clarification | Removes cloudiness |
| Texture modification | Prevents gelling in high-pectin fruits |
Dosage
Section titled “Dosage”| Component | Amount |
|---|---|
| Fruit purée or mash | 1000g |
| Pectinase (Pectinex Ultra SP-L) | 1–2ml (0.1–0.2%) |
Apple Juice Clarification
Section titled “Apple Juice Clarification”| Component | 1x | 2x |
|---|---|---|
| Fresh apple juice (cloudy) | 1000g (4 c) | 2000g (8 c) |
| Pectinase | 1.5ml | 3ml |
Method
Section titled “Method”-
Warm juice: Heat to 45–50°C / 113–122°F—optimal enzyme activity.
-
Add enzyme: Stir in pectinase thoroughly.
-
Incubate: Hold at 45–50°C for 1–2 hrs, or room temperature for 4–8 hrs.
-
Observe: Juice clarifies as pectin breaks down; solids settle.
-
Decant or filter: Pour off clear juice; filter if needed.
-
Deactivate: Heat to 80°C / 176°F for 5 min to stop enzyme activity.
Result: Crystal-clear juice with increased yield (~10–20% more).

| Salt | 2g | 4g |
Method
Section titled “Method”-
Treat dairy first: Combine milk and cream. Add lactase drops. Stir.
-
Incubate: Refrigerate 24 hrs. Enzyme works slowly at cold temps.
-
Proceed with base: Use treated dairy for standard custard method.
-
Adjust sugar: Lactase-treated dairy tastes sweeter. Reduce sugar by 15–20% if desired.

Applications
Section titled “Applications”| Use | Effect |
|---|---|
| Protein binding | Joins dairy proteins |
| Texture modification | Creates unique gel structures |
| Milk setting | Forms protein gel without heat |
Dosage
Section titled “Dosage”| Component | Amount |
|---|---|
| Protein-containing liquid | 1000g |
| Transglutaminase (Activa RM) | 5–10g (0.5–1.0%) |
Milk Gel
Section titled “Milk Gel”| Component | 1x | 2x |
|---|---|---|
| Whole milk | 500g (2 c) | 1000g (4 c) |
| Transglutaminase | 5g | 10g |
Method
Section titled “Method”-
Warm milk: Heat to 50°C / 122°F.
-
Disperse enzyme: Whisk transglutaminase into warm milk.
-
Incubate: Hold at 50°C for 2 hrs, or refrigerate overnight.
-
Result: Milk sets into soft, sliceable gel.
-
Deactivate: Heat above 75°C / 167°F to stop activity.
Invertase
Section titled “Invertase”Converts sucrose to glucose and fructose (invert sugar). Increases sweetness and affects freezing point.
Applications
Section titled “Applications”| Use | Effect |
