Clarification

Clarification produces crystal-clear liquids with pure flavor—no cloudiness, no particles. These techniques create visually striking bases and flavor concentrates.

The most versatile clarification method. Works with juices, stocks, dairy, and infusions.

ComponentRatio
Liquid to clarify100% (base)
Agar agar powder0.2% of liquid weight
Component1x2x
Fresh raspberry juice (with pulp)500g (2 c)1000g (4 c)
Agar agar powder1g (0.2%)2g

Yield: ~400g clarified juice (1x) — expect 15–25% loss

  1. Heat liquid: Bring juice to boil.

  2. Add agar: Whisk in agar powder while boiling. Maintain boil 2 min.

  3. Set: Pour into container. Refrigerate until firmly set, 2–4 hrs.

  4. Break gel: Cut set gel into rough 2cm cubes.

  5. Strain: Place cheesecloth-lined strainer over bowl. Add gel cubes.

  6. Wait: Let drip at room temperature 4–12 hrs. Do not press—pressing clouds the liquid.

  7. Collect: Clarified juice collects below; solids remain in cheesecloth.

  8. Store: Refrigerate. Use within 1 week.

Traditional technique using gelatin raft to trap particles.

Component1x2x
Liquid to clarify1000g (4 c)2000g (8 c)
Egg whites2 (60g)4 (120g)
Crushed ice100g200g
  1. Chill liquid: Liquid must be cold.

  2. Whip whites: Beat egg whites until frothy (not stiff).

  3. Combine: Mix cold liquid with frothy whites and crushed ice.

  4. Heat slowly: Bring to bare simmer over medium-low heat, stirring occasionally. Whites form a raft that rises.

  5. Simmer: Once raft forms, stop stirring. Simmer gently 30–45 min. Raft traps impurities.

  6. Strain: Ladle liquid through raft into cheesecloth-lined strainer.

  7. Result: Crystal-clear consommé.

Clarifies infused spirits while adding silky texture.

Fresh strawberries, hulled and sliced250g500g
Whole milk250g (1 c)500g (2 c)
Granulated sugar50g100g
Citric acid2g4g
  1. Infuse: Combine vodka, strawberries, and sugar. Steep 24–48 hrs. Strain out solids.

  2. Add acid: Stir citric acid into infusion.

  3. Add milk: Pour milk into infusion. Curds form immediately—this is expected.

  4. Rest: Refrigerate 24 hrs.

  5. Strain: Filter through coffee filter or fine cheesecloth. This takes time—don’t rush.

  6. Result: Crystal-clear spirit with strawberry flavor, silky mouthfeel.

Application: Use in boozy gelato or sorbet for clear color with full flavor.

Fastest method if equipment is available.

  1. Balance: Fill centrifuge tubes evenly.

  2. Spin: 4000+ RPM for 20–30 min.

  3. Decant: Carefully pour off clear supernatant.

  4. Result: Immediate clarification without flavor loss.
