Fluid Gels
Fluid gels are set gels that have been blended to create pourable, spoonable textures with unique properties. They coat, suspend, and flow differently than standard liquids.
Fluid Gel Science
Section titled “Fluid Gel Science”When hydrocolloid gels are sheared (blended), their structure breaks into microscopic gel particles suspended in liquid. The result:
- Flows when moved, sets when still (thixotropic)
- Coats evenly without running
- Suspends particles and mix-ins
- Creates unique mouthfeel
Agar Fluid Gel
Section titled “Agar Fluid Gel”The workhorse fluid gel. Clean flavor, versatile applications.
Base Formula
Section titled “Base Formula”| Component | 1x | 2x |
|---|---|---|
| Flavored liquid (juice, purée, infusion) | 250g (1 c) | 500g (2 c) |
| Agar agar powder | 1.5g (0.6%) | 3g |
| Sugar (if needed) | 25–50g | 50–100g |
Yield: ~250g fluid gel (1x)
Method
Section titled “Method”-
Disperse agar: Whisk agar into cold liquid. Let hydrate 5 min.
-
Heat: Bring to full boil while whisking. Agar requires 85°C+ to activate.
-
Boil: Maintain boil 1–2 min to ensure complete hydration.
-
Set: Pour into shallow container. Refrigerate until firmly set, 30–45 min.
-
Shear: Transfer set gel to blender. Process on high 60–90 sec until completely smooth.
-
Adjust: If too thick, blend in small amounts of matching liquid. If too thin, add more set gel.
-
Store: Refrigerate. Stable 1–2 weeks.
Gellan Fluid Gel
Section titled “Gellan Fluid Gel”More elastic texture than agar. Two types available with different properties.
Low-Acyl Gellan (Brittle)
Section titled “Low-Acyl Gellan (Brittle)”| Component | 1x | 2x |
|---|---|---|
| Flavored liquid | 250g (1 c) | 500g (2 c) |
| Low-acyl gellan | 1g (0.4%) | 2g |
| Calcium source (optional) | 0.5g | 1g |
Sets firm, shears to clean-breaking texture.
High-Acyl Gellan (Elastic)
Section titled “High-Acyl Gellan (Elastic)”| Component | 1x | 2x |
|---|---|---|
| Flavored liquid | 250g (1 c) | 500g (2 c) |
| High-acyl gellan | 1.5g (0.6%) | 3g |
Sets soft, shears to creamy, elastic texture.
Method (Both Types)
Section titled “Method (Both Types)”-
Disperse: Blend gellan into cold liquid with immersion blender.
-
Heat: Bring to 85°C / 185°F while stirring.
-
Hold: Maintain temperature 2 min.
-
Set: Cool rapidly. Low-acyl sets around 40°C; high-acyl around 70°C.
-
Shear: Blend until smooth.
Frozen Dessert Applications

|---|---|
| Vanilla seeds | Blend into agar fluid gel base |
| Fruit pieces | Suspend in high-acyl gellan |
| Chocolate chips | Coat in thin fluid gel before folding |
