Gianduja Build
Gianduja—the Italian marriage of chocolate and hazelnut—demands special technique. The split-cream method ensures proper chocolate emulsification while extracting maximum nut flavor. This build produces intensely flavored, silky-textured frozen dessert.

Method
Section titled “Method”Toast Hazelnuts
Spread hazelnuts on sheet pan. Toast at 325°F / 165°C for 12–15 minutes until fragrant and golden throughout. Skins will crack.
Remove Skins
While warm, wrap nuts in clean kitchen towel. Rub vigorously to remove loose skins. Some skin remaining is fine.
Chop Nuts
Chop fine, about 3–5mm. Do not pulverize—you want surface area without powder, but finer pieces extract more during the cook.
Build Custard
Whisk yolks, sugar, and salt. Whisk in milk and cream portion 1. Divide between mason jars. Divide chopped hazelnuts evenly among jars.
Sous Vide
Cook at 181°F / 82.8°C for 50 minutes. Swirl gently at 25 minutes.
Prepare Chocolate
During final 10 minutes of custard cooking:
- Place chopped chocolate in large, dry bowl
- Heat cream portion 2 to just below boiling (180°F / 82°C)
- Pour over chocolate
- Let sit 1 minute
- Whisk from center outward until smooth and glossy
Strain Custard into Chocolate
Remove jars from water bath. Immediately strain hot custard through fine-mesh strainer directly into chocolate. Press hazelnuts firmly to extract oils.
Emulsify
Whisk until completely combined and glossy. If emulsion looks broken (oily sheen, grainy), blend with immersion blender for 30 seconds.
Cool and Add Vanilla
Cool in ice bath to below 40°C. Whisk in vanilla extract.
Age
Cover and refrigerate minimum 8 hours, preferably overnight. This base benefits from extended aging.
Churn
Churn to –6°C / 21°F.
Harden
Transfer and freeze minimum 4 hours.
The Split-Cream Method Explained
Section titled “The Split-Cream Method Explained”Why Split the Cream?
Section titled “Why Split the Cream?”Cream in custard: Carries fat to extract nut oils during sous vide. Creates rich base.
Cream scalded on chocolate: Forms ganache emulsion that incorporates smoothly. Prevents seized chocolate.
Common Mistakes
Section titled “Common Mistakes”| Mistake | Result | Prevention |
|---|---|---|
| All cream in custard, none for chocolate | Chocolate seizes when custard added | Follow split ratios |
| Cold cream on chocolate | Chocolate hardens, won’t emulsify | Cream must be scalded (180°F+) |
| Chocolate not chopped fine | Uneven melting | Use pistoles or chop finely |
| Water in chocolate bowl | Chocolate seizes immediately | Ensure all equipment is dry |
| Custard too cool when strained | Poor emulsion | Strain while hot |
Chocolate Options
Section titled “Chocolate Options”| Chocolate | Character | Sugar Adjustment |
|---|---|---|
| Milk (38%) | Sweet, mild, classic gianduja | Reduce custard sugar 30g |
| Dark (64%) | Balanced, complex | Standard formula |
| Dark (70%) | Intense, less sweet | Standard formula or reduce 15g |
| Dark (85%) | Very bitter | Increase sugar 20g |
| White (35%) | Sweet, creamy | Reduce custard sugar 50g |

Troubleshooting
Section titled “Troubleshooting”| Problem | Cause | Solution |
|---|---|---|
| Grainy chocolate texture | Emulsion broke | Blend with immersion blender |
| Weak nut flavor | Under-toasted or under-pressed | Toast darker; press firmly when straining |
| Chocolate seized | Water contamination or cold cream | Ensure dry equipment; scald cream properly |
| Too sweet | High sugar + milk chocolate | Use darker chocolate or reduce sugar |
| Icy texture | High water from milk, low PAC | Add 30g dextrose to custard |
| Oily appearance | Fat separation | Re-emulsify with immersion blender |
Advanced: Nut Paste Variation
Section titled “Advanced: Nut Paste Variation”For even more intense nut flavor, supplement with commercial paste:
| Addition | Amount per 1 Qt | Adjustment |
|---|---|---|
| Hazelnut paste (100% nuts) | 60g | Reduce cream portion 1 by 40g |
| Add paste to | Finished ganache, whisk to combine |
