Fresh or frozen raspberries500g1000g
Water150g (⅔ c)300g (1⅓ c)
Granulated sugar150g300g
Light corn syrup40g80g
Lemon juice15g30g
Fine sea salt1.5g3g
Perfect Sorbet stabilizer4g8g

Yield: ~680g base → ~800ml churned (1x)

Target Values:

  • Brix: 28–30°
  • Serving temp: -14°C / 7°F
  1. Make simple syrup: Combine water and sugar in saucepan. Heat until dissolved. Cool to room temperature.

  2. Purée fruit: Blend raspberries until smooth, 30 sec.

  3. Strain: Pass through fine-mesh strainer, pressing firmly. Discard seeds. You’ll yield ~400g strained purée from 500g berries.

  4. Combine: Mix strained purée with cooled simple syrup, corn syrup, lemon juice, and salt.

  5. Check Brix: Measure with refractometer. Target 28–30°. Adjust with water (to lower) or sugar (to raise).

  6. Stabilize: Add Perfect Sorbet stabilizer. Blend with immersion blender 30 sec to fully disperse.

  7. Age: Refrigerate minimum 4 hrs—overnight is better for stabilizer hydration.

  8. Churn: Process until thick and holds shape, typically -5°C / 23°F.

  9. Harden: Transfer to container. Freeze -18°C / 0°F for 4+ hrs.

Bright red, classic summer flavor.

Target Brix: 28–30°

  1. Purée: Blend hulled strawberries until completely smooth.

  2. Optional strain: Pass through strainer to remove seeds for silkier texture. Seeds are small—straining is optional.

  3. Simple syrup: Dissolve sugar in water. Cool.

  4. Combine: Mix purée with syrup, corn syrup, lemon, and salt.

  5. Check Brix: Adjust to 28–30°.

  6. Stabilize: Add stabilizer. Blend with immersion blender.

  7. Age, churn, harden: Standard process.

  2. Simple syrup: Dissolve sugar in water. Cool.

  3. Combine: Mix strained purée (~380g yield) with syrup, corn syrup, lemon, and salt.

  4. Check Brix: Target 29–31°. Blackberries vary widely in sweetness.

  5. Stabilize: Add Perfect Sorbet. Blend.

  6. Age, churn, harden: Standard process.
