New York Dense

Inspired by legendary New York ice cream shops, this style maximizes richness while minimizing air. The result: intensely flavored, spoon-bendingly dense ice cream that delivers maximum impact per bite.

Prepare Custard

Follow the Sous Vide Custard or Stovetop Custard technique. This high-yolk formula benefits from sous vide’s precision—stovetop requires very careful attention.

Age Extended

Refrigerate minimum 8 hours, ideally 24 hours. The high fat content benefits from extended aging for proper crystallization.

Churn Briefly

Churn to –6°C / 21°F but watch carefully—this dense base can over-churn quickly. The goal is minimal overrun (20–35%).

Pack Densely

Transfer to container, pressing firmly to eliminate air pockets. This isn’t fluffy ice cream—pack it solid.

Harden

Low water content makes this base tolerant of standard –18°C hardening; blast freezing remains optimal.

This style deliberately limits air incorporation:

Techniques for low overrun:

  • Fill machine to maximum capacity (less whipping action)
  • Use slower churn speed if adjustable
  • Shorten churn time
  • Chill base to 2°C before churning
  • Draw at slightly colder temperature (–7°C)

Signs of proper density:

  • Base barely expands during churn
  • Finished product is heavy in the container
  • Scoop requires effort
  • Meltdown is slow

This ultra-rich base excels with bold flavors:
