Overrun Calculator
Overrun measures the air incorporated during churning. It affects texture, density, yield, and perceived richness.
Understanding Overrun
Section titled “Understanding Overrun”Overrun = percentage increase in volume from air incorporation
Overrun % = ((Churned Volume - Base Volume) / Base Volume) × 100| Overrun | Meaning |
|---|---|
| 0% | No air added (impossible in practice) |
| 25% | Dense (gelato) |
| 50% | Moderate (premium ice cream) |
| 100% | Light (standard commercial) |
| 100%+ | Very airy (economy products) |

Target Overrun by Product
Section titled “Target Overrun by Product”| Product | Target Overrun | Notes |
|---|---|---|
| Dense gelato | 20–25% | Intense, heavy |
| Standard gelato | 25–35% | Traditional |
| Artisan ice cream | 30–50% | Rich, creamy |
| Premium ice cream | 40–60% | Balanced |
| Standard commercial | 60–90% | Lighter |
| Economy ice cream | 90–120% | Very airy |
| Soft-serve | 30–50% | Served from machine |
Manual Calculation
Section titled “Manual Calculation”Calculate Overrun
Section titled “Calculate Overrun”Overrun % = ((Final Volume - Starting Volume) / Starting Volume) × 100Example:
- Base: 750ml
- Churned: 975ml
- Overrun = ((975 - 750) / 750) × 100 = 30%
Calculate Expected Yield
Section titled “Calculate Expected Yield”Expected Yield = Base Volume × (1 + Overrun% / 100)Example:
- Base: 750ml
- Target overrun: 40%
- Yield = 750 × (1 + 40/100) = 1050ml
Factors Affecting Overrun
Section titled “Factors Affecting Overrun”Increases Overrun
Section titled “Increases Overrun”| Factor | Effect | Notes |
|---|---|---|
| Higher fat | +++ | Fat stabilizes air bubbles |
| More emulsifiers | ++ | Yolks, lecithin help |
| Longer churn | ++ | More air incorporation |
| Stabilizers | + | Some help trap air |
| Warmer base | + | Easier to incorporate air |
Decreases Overrun
Section titled “Decreases Overrun”| Factor | Effect | Notes |
|---|---|---|
| Lower fat | --- | Less air retention |
| No emulsifiers | — | Air escapes |
| Short churn | — | Less time for air |
| Very cold base | - | Harder to aerate |
| Heavy mix-ins | - | Deflate during fold |
Controlling Overrun
Section titled “Controlling Overrun”For Lower Overrun (Denser)
Section titled “For Lower Overrun (Denser)”| Technique | Implementation |
|---|---|
| Stop churn early | Monitor temperature |
| Use less fat | Gelato-style ratios |
| Reduce stabilizers | Minimal amounts |
| Pack firmly | Remove air pockets |
For Higher Overrun (Lighter)
Section titled “For Higher Overrun (Lighter)”| Technique | Implementation |
|---|---|
| Longer churn | Continue until very thick |
| Higher fat | More cream |
| Add emulsifiers | Extra yolks or lecithin |
| Proper aging | Full stabilizer hydration |
Measuring Overrun
Section titled “Measuring Overrun”Weight Method (Most Accurate)
Section titled “Weight Method (Most Accurate)”- Weigh base before churning
- Measure churned volume using known container
- Calculate density and compare
Base density ≈ 1.05–1.10 g/ml (ice cream base)Churned density = Weight / VolumeOverrun = ((Base Density / Churned Density) - 1) × 100Volume Method (Practical)
Section titled “Volume Method (Practical)”- Mark container at base level
- Transfer churned product
- Measure increase in height/volume
