Fudge & Ganache

Chocolate swirls require specific formulation to remain soft at freezer temperatures. Standard ganache hardens into unpleasant shards. These recipes stay scoopable.

Classic American-style fudge that stays soft and glossy at -18°C / 0°F.

Yield: ~470g (1x) | ~940g (2x)

Target: Pourable at room temp, soft at freezing

  1. Bloom cocoa: Whisk cocoa into cream in heavy saucepan. Heat over medium, whisking until smooth and steaming.

  2. Dissolve sugars: Add corn syrup and sugar. Whisk until dissolved. Bring to gentle simmer.

  3. Temper chocolate: Remove from heat. Add chopped chocolate. Let sit 1 min, then whisk from center outward until smooth.

  4. Finish: Whisk in butter until emulsified. Add vanilla and salt.

  5. Cool: Transfer to jar. Rest 30 min at room temperature before refrigerating.

  6. Use: Warm briefly if too thick to drizzle—microwave 10 sec intervals, stirring between.

  1. First layer: Add ⅓ churned ice cream to container
  2. Drizzle: Stream fudge in thin lines across surface
  3. Don’t mix: Let ribbons sit—do not fold or swirl yet
  4. Repeat: Two more layers of ice cream and fudge
  5. Single drag: One knife pass through all layers creates dramatic marbling
  6. Seal: Press plastic directly onto surface
